RECIPE
Ingredients:
- 3-4 baking potatoes
- 2 tablespoons butter
- 1 sausage, diced
- 1/2 cup cheddar cheese, grated
- 1 large egg
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Directions:
- Heat oven to 200° C.
- Cut each potato in half. Scrub the potatoes and pierce each with the tines of a fork. Place on a baking sheet and bake until fork-tender, about 25 minutes.
- Meanwhile, in a skillet, cook sausage over medium heat until crisp.
- When potatoes are cool enough to handle, cut a thin slice off the top of each and discard. Scoop out pulp, leaving a shell.
- In a small bowl, mash pulp with remaining butter. Stir in the egg, salt and pepper. Stir in the cheese and sausage.
- Spoon the mixture back into the potato halves, creating a hollow in each center.
- Place on a baking sheet. Bake at for 15-20 minutes or until set.
