RECIPE
Ingredients:
- 1 sheet puff pastry, quartered
- 1 bunch spinach, ends trimmed, washed, shredded
- 2 teaspoons olive oil
- 1 onion, sliced
- 1 garlic, chopped
- 50g feta, crumbled
- salt and pepper
Directions:
- Preheat oven to 180°C.
- Heat olive oil in a frying pan over medium heat.
- Cook onion with garlic, add salt and spinach and cook until wilted. Sprinkle with crumbled feta. Mix and set aside to cool slightly.
- Line baking trays with non-stick baking paper.
- Divide the filling among the pastry squares.Place about 1 tablespoon spinach mixture in the middle of each pastry square.
- Fold squares over the filling to form triangles.
- Place on a baking sheet.
- Bake for about 20 minutes or until golden.
- Best served warm or at room temperature with thyme and garlic dip.
