Peanut Cookies

RECIPE

Ingredients:

• 1 cup flour
• 125 g butter
• 1/2 cup brown sugar
• 1 egg
• 1/2 teaspoon bicarbonate of soda
• 1/2 cup oats
• 1 cup salted peanuts
• 1/3 cup crushed cornflakes

Directions:

1. Cream the butter and sugar together until the mix is light and creamy.
2. Add the egg the mix and beat well.
3. Fold in the sifted flour and bicarbonate of soda.
4. Add the oats, cornflakes and peanuts and mix well.
5. Drop rounded teaspoonfuls of the mixture onto a lightly greased oven tray.
6. Bake in a moderate oven (180° C) for 10 to 12 minutes, or until golden brown.
