RECIPE
Ingredients:
- 200g green pasta (spinach spaghetti)
- 300g frozen spinach, chopped
- 1/2 onion, diced
- 1 cloves garlic, minced
- 3 tablespoons olive oil
- 150 g ricotta cheese
- black olives, cut into slices
- pepper and sea salt
- fresh basil, parsley, or coriander
Directions:
- Boil salted water and add the pasta, cook al dente, according to instructions on package.
- While draining pasta, reserve about 1/8 cup of the cooking water. While pasta is cooking, heat olive oil in frying pan and saute onions until soft. Add garlic and cook for about 1-2 minutes. Add the frozen spinach, cook until warmed through, about 10 minutes.
- Add the pasta as soon as it’s ready and fold in the spinach sauce.
- Add the ricotta cheese, olives and stir.
- Taste and add pepper and salt if needed.
- Place the hot spaghetti in a warm serving bowl, add fresh herbal, mix well and serve.
