These small bite size toasts are fantastic for an aperitif.
RECIPE
Ingredients:
- 1/2 loaf ciabatta or baguette, cut on a diagonal into 1-2 cm pieces
- 250g ripe tomatoes, cut into four pieces each
- 1-2 garlic gloves
- 3 tablespoons extra-virgin olive plus more for drizzling
- sea salt and freshly ground black pepper
- fresh basil leaves, coarsely chopped
Directions:

Combine tomatoes and olive oil in a large bowl. Season with salt and pepper. Mix well.

Rub one side of toasted bread with cut sides of remaining garlic clove.

Drizzle bread with oil.

Arrange crostini slices on a baking sheet. Spoon some tomato mixture on top of each crostini.
- Season to taste with salt and pepper.
- Bake 10 min at 180 C.
- Add chopped basil.
