RECIPE
Ingredients (2 servings)
- 2 salmon fillets
- 1/2 tsp black pepper
- lamb’s lettuce
- almond flakes
Strawberry-Balsamic Reduction:
- 3/4 cup chopped strawberries (save some extra to garnish)
- 4 tablespoons balsamic vinegar
- 4 tablespoons water
- 1 teaspoon honey or brown sugar
Instructions
- Preheat oven to 200C.
- Place all ingredients for the strawberry-balsamic reduction into a blender and blend until smooth.
- Pour into a saucepan and allow to come to a boil and reduce by half.
- Lay salmon fillets on a foil lined baking pan. Sprinkle with black pepper and almond flakes and cook in oven for 15 minutes, or until done.
- Place a couple of tablespoons of the reduction on plates then add lettuce with extra strawberries to garnish, one salmon fillet and top with sauce.
