RECIPE
Ingredients:
- 1 sheet puff pastry
- 3 strips of bacon, cut into little strips
- 2-4 quail eggs
- 2 tablespoons ricotta cheese
- 1 cup arugula
- salt, pepper
Directions:
- Preheat oven to 180C.
- Place the puff pastry on a sheet of parchment paper and cut into squares.
- Top with bacon and bake until a light golden brown, for 15 minutes.
- Allow to cool a bit.
- While the pastry is baking, cook the eggs in a skillet.
- Sprinkle with chopped ricotta, arugula and salt and pepper.
- Top with eggs.
