RECIPE
Ingredients:
- 1 baguette (slices, for serving)
- 1/2 bunch spinach, ends trimmed, washed, shredded
- 2 teaspoons olive oil
- 1/2 onion, sliced
- 1/2 garlic, chopped
- 20g feta, crumbled
- salt and pepper
Directions:
- Preheat oven to 180°C.
- Heat olive oil in a frying pan over medium heat.
- Cook onion with garlic, add salt and spinach and cook until wilted. Sprinkle with crumbled feta. Mix and set aside to cool slightly.
- Spread a teaspoon of spinach mixture on each baguette slice.
- Bake for about 10-15 minutes or until golden.
- Best served warm or at room temperature with sesame.
