RECIPE
Ingredients:
- 5 eggs
- 1 cup caster sugar
- 1 1/5 cup oil
- 300 g buttermilk or yogurt
- 3 3/4 cup plain flour
- 2 teaspoon baking powder
- 1 cupful sliced fresh plums
Directions:
- Preheat oven to 180 C. Grease and flour one 23cm tube cake tin.
- In a bowl, beat the egg whites until stiff peaks form, add sugar, yolks and mix.
- Stir together the flour and baking powder and then beat the flour mixture into the oil and yogurt. Gently fold in the egg mixture.
- Spread the batter evenly into the prepared tin. Arrange the plums, skin side down, attractively over the batter.
- Bake in preheated oven for 50 minutes or until cake tests done.
- Transfer to a cooling rack and allow to cool before serving.
