RECIPE
Ingredients:
- 1 fresh pineapple, peeled, halved lengthways
- 2 tablespoon brown sugar
- 1/2 cup coconut milk
- 1/3 cup heavy cream
- 1/2 cup desiccated coconut
Directions:
- Preheat a grill on medium. Cut pineapple half lengthways into 6 wedges. Grill the pineapple slices on grill for 2-3 minutes each side or until golden and slightly charred and softened. Set aside to cool enough to handle. Chop the pineapple.
- Meanwhile, bring the coconut milk to a boil in small saucepan. Reduce heat to medium-low, add brown sugar and heavy cream. Stir until the sugar are dissolved. Add the desiccated coconut, return to a gentle simmer, cover and cook about 7 minutes.
- Serve pineapple with the coconut milk drizzled on top. Serve hot or cold.
