Fabulous simple fluffy apple muffins with a delicious cinnamon taste! Give them a try — you won’t be sorry!
RECIPE (14 muffins)
Ingredients:
- 2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
- 100g butter, at room temperature
- 1/4 cup stewia powder or 1 cup brown sugar
- 1 egg
- 1 cup buttermilk
- 3 large apples, peeled, cored, and coarsely chopped
Directions:
- Preheat the oven to 180°C.
- Grease with butter muffin cups.
- Mix together the flour, baking powder, cinnamon stevia (or sugar), and salt.
- In a second bowl, cream the butter until fluffy. Add the egg and mix well. Mix in the buttermilk gently. Stir in the dry ingredients and fold in the apple chunks.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.
