Mazurek or Mazurka (in english) is a simple traditional Polish cake baked for Easter. There are various kinds of Polish mazurek made from different dough. The dough is interleaved with a nut mass, preserves or a jam. The surface of mazurek is decorated with icing, chocolate, toffee, marzipan, dried or fresh fruit, almonds, nuts and raisins.

PASTRY
Ingredients
- 160 g wheat flour
- 90 g potato flour
- 70 g sugar
- 150 g butter
- 1 egg
Directions
- Sift the flours into a large bowl. Add the sugar, butter and egg.
- Mix all ingredients until they are combined and the dough forms a nice round ball.
- Using a rolling pin flatten the dough quite thinly.
- Cut into 3 rectangular (10x 30).
- Bake at 180 C until golden brown.
- Brush the cake with chocolate cream and sprinkle with crushed meringues.
TOPPING
MERINGUES:
- 1 egg white
- 60 g caster sugar
- Preheat oven to 100°C.
- Place the egg white in a bowl. Use an electric beater to whisk the egg whites until soft peaks form.
- Gradually add the sugar and whisk until the sugar dissolves. Continue beating for 2 minutes or until the mixture is thick, glossy.
- Place the mixture into a piping bag. Pipe meringues, about 3cm apart on non-stick baking paper.
- Bake in preheated oven for 1-2 hours until meringues are crisp and sound hollow when tapped on base. Turn oven off and leave in oven for 3 hours or until cool.
CHOCOLATE CREAM
- 200 g heavy cream
- 100 g caster sugar
- 100 g cocoa
- 100 g chocolate, melted
- 1/4 cup of water
- In a saucepan mix the cocoa with sugar, then combine with 1/4 cup water.
- Gradually pour the cream and stir. Bring to a boil while stirring.
- Aside from the heat, add chocolate and stir to melt.
